Getting It Together

My act, that is.  I have sixty eight days left until I return to work.  Not that I'm counting or anything.

Everyday I wonder how I'm going to cook dinner and make sure that we follow a Paleo type diet in sixty eight days. It's hard enough being able to cook while being home with Madeline on maternity leave never mind working and commuting on a daily basis (I'm gone from 5:40am until 5:00pm).  As a test of how long it will take me to clean all of my CSA vegetables and have them labeled and individually packed, I spent this morning working while Madeline was in the carrier on me. It took two hours and twenty three minutes. Not that I'm counting or anything.  Just to clean and prep, never mind cook.  Oye vey.  But I think I proved that I just have to be diligent and committed to staying up one night per week to do it.    






Anyway, these vegetables should last us for the week. On the menu tonight is leftover ribs from a friends barbecue last night with fried rice made with bacon from Lowland Farms, corn on the cob, and Swiss chard. For the rest of the week I will make pork lettuce wraps, beef stew, crock pot chicken and salmon.  All supplemented with these vegetables of course.
